Description
Liquid Jaggery is widely known as Indian Golden Syrup as well Indian substitute for Maple Syrup. The product obtained from the concentrating sugar cane juice after clarification. It is semi-liquid and is also known as sugarcane juice concentrate.
In Marathi it is popular with the name of Kakavi, in Kannada with Kakavi and in Gujarati with Golnupa. The liquid Jaggery contains water, sugar and non-sugar materials. The sugar is in the form of sucrose, glucose and fructose and the non-sugar materials are organic and inorganic materials viz. Proteins, amino acids, phenolic compounds, citric acid, gums, polysaccharides, wax, sterol, pigments, and salt of calcium, potassium, magnesium, phosphorous, iron, zinc and sulfur etc. The invert sugar content of liquid Jaggery is more (about 33.7%) as compared to solid Jaggery (6.28%)and is quickly and easily-assimilated by the human digestive system and therefore, is recommended for the patients suffering from jaundice and anemia etc. mostly in rural villages.
It is used in various confectionery items. Cold drinks are also prepared to mix with water in different proportion and adding different essences. Due to its high nutritive values and consumer appealing characteristics, it has a vital potential for becoming a popular village cottage industry. The manufacturing process of liquid Jaggery has been standardized by Kolhapur center and evaluated under multi location trail by all the centers of AICRP on processing, handling and storage of Jaggery and Khandsari.
